Carob molasses is made by soaking milled carob pods in water and slowly reducing the extracted liquid to a thick syrup.
In Lebanon, carob molasses is often used as an alternative to sugar. Carob is naturally high in fiber and is caffeine-free, which makes it ideal for people with high blood pressure. Traditionally, it is mixed with tahini (sesame paste) and eaten as a dessert accompanied by pita bread. Our carob molasses is produced by a cooperative in the Bekaa valley based on the know-how passed down from generation to generation.
