Cucumber Tagliatelle Salad with Pomegranate Molasses Vinaigrette

Ingredients:
For the Salad:
- 1 cucumber
- 2 tbsp pine nuts
- 2 tbsp kasha
- 50 g feta cheese
- 10 coriander leaves
For the Sauce:
- 2 tbsp olive oil
- 10 g mustard
- 1 tbsp pomegranate molasses
- 10 sprigs fresh coriander
- 1 pinch salt and pepper
Preparation:
- Using a peeler, cut the cucumber into thin strips.
- Remove leaves and chop coriander.
- Mix olive oil, pomegranate molasses, mustard, salt, pepper and coriander, then pour dressing over cucumber strips.
- Chill the cucumber salad.
- In a hot frying pan, toast the pine nuts and kasha for 5 min.
- Place the cucumber salad, feta and a few coriander leaves in a soup plate.
- Sprinkle with pine nuts and kasha.
Serve!
