Chocolate Easter Nest with Bitter Orange Syrup

For 2 people

 

 

Ingredients:

 

For the cakes: 

  • 60g dark chocolate
  • 60g butter 
  • 2 eggs
  • 50g sugar
  • 20g flour
  • 2 tbsp bitter orange syrup
  • 1 pinch of salt 
  • ¼ sachet baking powder

 

For the topping:

  • 200g mascarpone 
  • 100g icing sugar
  • 25g dark chocolate 
  • 8 small chocolate Easter eggs

 

Utensils:

 

  • Piping bags
  • Cupcake nozzle 
  • 15 cm cake mold  

 

Preparation:

 

For the cakes: 

  1. Preheat the oven to 180°C.
  2. Melt the chocolate and butter in a bain-marie.
  3. Separate the egg whites from the yolks.
  4. In a bowl, whisk the egg yolks and sugar.
  5. Add the flour and melted chocolate. Mix.
  6. Add the bitter orange syrup. Mix.
  7. Beat the egg whites until stiff and fold them into the mixture. Mix gently.
  8. Butter the cake tin.
  9. Pour in the mixture and bake for 25 mins at 180°.

 

For the topping and finishing the cake:

  1. Melt the chocolate in a bain-marie.  
  2. Gently mix the mascarpone with the icing sugar.  
  3. Add two teaspoons of melted chocolate to the mixture.  
  4. Stir gently.  
  5. Pour the topping mixture into a piping bag with a cupcake tip and decorate the top of the cake.  
  6. Place the chocolate eggs.
