
Strawberry Salad with Rose Syrup & Poppy Seed Crumble

For 2 people
Ingredients:
- 1 punnet of strawberries
- 15g rose syrup
- 15g brown sugar
- 1 Greek yogurt
- 60g cold cream
Crumble:
- 80g flour
- 1 tbsp brown sugar
- 50g cold butter
- 2 tbsp poppy seeds
Utensils:
- Oven
- Mixer or whisk
- Baking paper
- Small dessert glasses (verrines)
Preparation:
- Mix flour and butter with your fingertips until a sandy texture is obtained. Add sugar and poppy seeds. Spread on a baking sheet lined with baking paper. Bake at 180°C for 12 to 15 mins. Let cool.
- Halve half the strawberries, heat them with the sugar over high heat, then simmer for 10 mins over medium heat. Strain, let cool, and add the rose syrup. Chop the remaining strawberries and set aside.
- Whip the cream until soft peaks form and gently fold it into the Greek yogurt.
- In a glass, layer the strawberry mix, 1 tbsp of mousse, a few fresh strawberries, 1 to 2 tablespoons of rose syrup, and sprinkle with the crumble.
