Stir-Fried Noodles & Shrimp with Rose Chili Paste

Difficulty: Easy

Preparation and resting time: 30 mins 

For 2 people

 

 

Ingredients:

 

  • 150g rice noodles
  • 200g shrimp 
  • 50g edamame 
  • 1 carrot 
  • 1 bell pepper 
  • 10 flat green beans 
  • 1 tbsp olive oil 
  • 1 garlic clove 
  • 1 onion 
  • 1 tbsp chili paste with rose petals 
  • 10g ginger 
  • ½ lemon
  • 20 fresh coriander leaves 
  • 1 pinch of salt and pepper 
  • 2 tbsp peanuts

     

    Preparation:

     

    1. Peel the shrimp and set aside. 
    2. Slice the carrot and bell pepper into thin strips. 
    3. Separately chop the garlic, onion, ginger, and peanuts. 
    4. In a saucepan, bring water to a boil. 
    5. Cook the rice noodles for 5 mins, then drain. 
    6. In a frying pan, heat the olive oil over medium heat and sauté the garlic and onion. Add the shrimp, carrots, flat green beans, bell peppers, and ginger.  
    7. Cook for 2 mins. Add the rice noodles and continue to cook for 3 mins. 
    8. In a small bowl, mix the chili paste with rose petals with the juice of half a lemon.
    9. Pour the sauce over the noodles and cook for 2 more mins. 
    10. Place the noodles on a plate. 
    11. Top with edamame, and sprinkle with fresh coriander leaves and chopped peanuts
