Spinach Fatayer

For 4 to 6 people
Ingredients:
For the dough:
- 360 g flour
- 240 ml of lukewarm water
- 120 ml olive oil
- ½ tbsp yeast
- 1 tsp of sugar
- 1 tsp of salt
For the garnish:
- 500 g spinach, washed and finely cut
- 1 medium onion chopped
- 60 ml olive oil
- 2 tbsp lemon juice
- 2 tbsp toasted pine nuts (optional)
- 1 tbsp pomegranate molasses
- 1 tsp sumac (optional)
- ½ tsp salt
Preparation:
- Mix ¼ cup water, sugar and yeast. Let the mixture rest for 15 mins.
- Combine flour, salt, ½ cup olive oil and yeast mixture. Add the water little by little, kneading until you obtain a soft dough. Leave to rise for 1h.
- Heat ¼ cup olive oil, sauté the onion, then add the spinach, salt, lemon juice, pomegranate molasses and sumac. Cook for about 10 mins.
- Roll out the dough thinly and cut out circles with a bowl or cookie cutter.
- Place a tablespoon of filling in the center of each circle and fold into triangles.
- Place on an oiled baking sheet, brush with olive oil.
- In an oven preheated to 180°C, leave to slightly brown for around 20 mins.
