Crispy Kamouneh Pancakes & Wild Herb Salad

For 4 people

 

 

Ingredients:

 

  • 100g kamouneh mix
  • 1 onion
  • 2 eggs
  • 4 rusks (or breadsticks) or 4 tbsp breadcrumbs
  • Fleur de sel
  • Olive oil
  • handful of roasted almonds
  • Sorrel leaves, fennel leaves or any other salad greens
  • tbsp pomegranate molasses

 

Preparation:

 

  1. Finely chop the onion and set aside.    
  2. Beat the eggs with the fleur de sel, the crumbled rusks or the 4 tbsp of breadcrumbs.
  3. Pour the mixture over the kamouneh and combine well.   
  4. Form small pancakes.   
  5. Heat some oil in a pan.  
  6. When it is hot, place the small patties and let them cook for 4 mins on each side
  7. Arrange the patties on the salad leaves.   
  8. Pour in a drizzle of pomegranate molasses, and add a few roasted almonds.
