Pistachio & Rose Syrup Cookies

For 10 cookies
Ingredients:
- 120g softened butter
- 60g brown sugar
- 40g white sugar
- 3 tbsp Rose Syrup
- 1 egg
- 200g plain flour
- ½ tsp baking soda (or baking powder)
- 1 pinch of salt
- 80g unsalted pistachios, roughly chopped
- 80g white chocolate chips
- Few edible rose petals for decoration (optional)
Preparation:
- In a mixing bowl, cream together the softened butter, brown sugar and white sugar until light and fluffy.
- Add the egg and Terroirs du Liban Rose Syrup. Mix until smooth.
- Stir in the flour, baking soda, and salt. Mix gently until just combined.
- Add three-quarters of the chopped pistachios and white chocolate chips. Reserve the remaining portion for the topping.
- Refrigerate the dough for 15 to 20 mins.
- Preheat the oven to 180°C. Shape the dough into 10 equal balls and place them on a lined baking tray.
- Sprinkle the remaining pistachios and white chocolate chips over the cookies.
- Bake for 9 to 11 mins, until the edges are lightly golden.
- Once out of the oven, gently brush the cookies with a small amount of Terroirs du Liban Rose Syrup to enhance the floral notes.
