Multi-Grain Braided Brioche with Orange Blossom Water

For 1 brioche

 

 

Ingredients:

 

  • 575 g fine wheat flour
  • 25 g fresh yeast 
  • 70 g sugar
  • 4 eggs  
  • 80 ml warm milk
  • 200 g semi-salted butter, softened
  • 3 tbsp orange blossom water 

     

    Utensils:

     

    • Cake tin 
    • Food processor

     

    Preparation:

     

    1. Take the eggs and milk out of the fridge to bring them room temperature. 
    2. In a large bowl, start by mixing all the liquids: milk, eggs, and softened butter (not melted, to obtain an airy crumb).
    3. Add the fine wheat flour, sugar and fresh yeast to the mixture
    4. Knead in a food processor or by hand until the mixture is smooth and homogeneous.
    5. Let the dough rise in a warm place or in the oven at 30°C, placing a container of water at the bottom of the oven, as the dough needs a little heat and humidity to rise. Allow 2h 30 mins for rising
    6. Punch down the dough on a floured surface and shape as desired.  
    7. Brush with a mixture of beaten egg and milk
    8. Let it rest under a tea towel for an extra 30 mins. 
    9. Bake at 175°C fan-forced for 30 mins.
