Lamb Chops with Freekeh & Coriander and Parsley Sauce

For 2 people
Ingredients:
- 200 g freekeh (roasted green wheat)
- 4 lamb chops
- 10 stalks fresh parsley
- 10 sprigs fresh coriander
- 100 g fresh peas
- 2 cloves garlic
- 1 tbsp cumin
- ½ lemon
- ½ orange
- 1 tbsp olive oil
- 10 g butter
- 1 fillet Tabasco
- 1 pinch salt and pepper
Utensils:

Preparation:
- Mix the parsley, coriander, garlic, cumin, olive oil, Tabasco, juice of half a lemon and orange zest. Set aside.
- In a pot of boiling salted water, cook the freekeh for 45 minutes, then drain and set aside.
- In a pan, pour a drizzle of olive oil and cook the chops with a pinch of salt. Set aside.
- In a saucepan, melt butter and add peas, deglaze with orange juice, and let simmer for 5 minutes. Then, add the cooked Freekeh. Mix.
- On a plate, place the freekeh and the peas then add the chops, the parsley, and coriander sauce.
