Orange Blossom Madeleines & White Chocolate

Orange Blossom Madeleines & White Chocolate

Difficulty: Easy

Cooking time: 10 mins

Resting time: 30 mins

For 12 madeleines

 

 

Ingredients:

 

  • 2 eggs  
  • 80g sugar 
  • 100g flour 
  • 80g butter (melted) 
  • 1 tsp baking powder 
  • 1 pinch of salt 
  • 1 to 2 tbsp orange blossom water 
  • 100 to 150g white chocolate 

 

Preparation:

 

  1. Whisk the eggs and sugar until the mixture becomes slightly fluffy.
  2. Add the flour, baking powder, and salt, then mix gently. 
  3. Fold in the melted butter, then add Terroirs du Liban orange blossom water.  
  4. Place the batter in the fridge for 30 mins. 
  5. Preheat the oven to 200°C. 
  6. Fill the madeleine molds three-quarters full, then bake for 3 mins at 210°C, then for 5 to 7 mins at 180°C.  
  7. Remove the madeleines while still warm and let them cool.

 

For the white chocolate coating:

  1. Gently melt the white chocolate in a double boiler or in the microwave.  
  2. Pour a thin layer of melted white chocolate into each mold cavity. 
  3. Tap gently to smooth the surface. 
  4. Place the madeleines back in the mold, rounded side up, pressing down lightly. 
  5. Refrigerate for 20 to 30 mins until the chocolate has hardened. 
  6. Carefully unmold.
