Orange Blossom Madeleines & White Chocolate

For 12 madeleines
Ingredients:
- 2 eggs
- 80g sugar
- 100g flour
- 80g butter (melted)
- 1 tsp baking powder
- 1 pinch of salt
- 1 to 2 tbsp orange blossom water
- 100 to 150g white chocolate
Preparation:
- Whisk the eggs and sugar until the mixture becomes slightly fluffy.
- Add the flour, baking powder, and salt, then mix gently.
- Fold in the melted butter, then add Terroirs du Liban orange blossom water.
- Place the batter in the fridge for 30 mins.
- Preheat the oven to 200°C.
- Fill the madeleine molds three-quarters full, then bake for 3 mins at 210°C, then for 5 to 7 mins at 180°C.
- Remove the madeleines while still warm and let them cool.
For the white chocolate coating:
- Gently melt the white chocolate in a double boiler or in the microwave.
- Pour a thin layer of melted white chocolate into each mold cavity.
- Tap gently to smooth the surface.
- Place the madeleines back in the mold, rounded side up, pressing down lightly.
- Refrigerate for 20 to 30 mins until the chocolate has hardened.
- Carefully unmold.
