Chia Pudding with Carob Molasses and Apples

For 2 people

 

 

Ingredients:

 

For the chia pudding:  

  • 200g of vegetable milk 
  • 30g chia seeds  
  • 2 tablespoons carob molasses

 

For the roasted apples:    

  • 6 small apples (such as reinettes) 
  • 30g butter
  • 50ml water  
  • 1 teaspoon cinnamon (optional) 

 

For the topping:

  • Choose from: granola, almonds... 

 

Preparation:

 

  1. In a bowl, combine the vegetable milk, chia seeds and carob molasses. 
  2. Mix well for 30 seconds, the seeds should be well distributed in the milk.
  3. Refrigerate for at least 2H, ideally overnight. 
  4. Meanwhile, prepare your apples: peel them (if they are not organic), and cut them into quarters. 
  5. Melt the butter in a frying pan and add the apple quarters. Sauté for 3–4 mins until lightly golden.   
  6. Add the water, reduce the heat and cover for 10 mins.  
  7. Remove the lid and allow any remaining liquid to evaporate.  
  8. For the presentation: alternate layers of chia pudding and apples, finish with a layer of apples, a little granola and a drizzle of carob molasses.
