Chia Pudding with Carob Molasses and Apples

Ingredients:
For the chia pudding:
- 200g of vegetable milk
- 30g chia seeds
- 2 tablespoons carob molasses
For the roasted apples:
- 6 small apples (such as reinettes)
- 30g butter
- 50ml water
- 1 teaspoon cinnamon (optional)
For the topping:
- Choose from: granola, almonds...
Preparation:
- In a bowl, combine the vegetable milk, chia seeds and carob molasses.
- Mix well for 30 seconds, the seeds should be well distributed in the milk.
- Refrigerate for at least 2H, ideally overnight.
- Meanwhile, prepare your apples: peel them (if they are not organic), and cut them into quarters.
- Melt the butter in a frying pan and add the apple quarters. Sauté for 3–4 mins until lightly golden.
- Add the water, reduce the heat and cover for 10 mins.
- Remove the lid and allow any remaining liquid to evaporate.
- For the presentation: alternate layers of chia pudding and apples, finish with a layer of apples, a little granola and a drizzle of carob molasses.
