Roasted Carrots with Sumac

For 2-3 people
Ingredients:
- 1 bunch of carrots
- 1 garlic clove
- Extra Virgin Olive Oil
- Sea salt, to taste
- Freshly ground black pepper
- 2 tbsp sumac
For serving:
- 1 cup Greek yogurt
- Juice and zest of ½ lemon
- 2 tbsp tahini
Preparation:
- Preheat the oven to 180°C.
- Wash the carrots and trim the tops.
- Slice the garlic clove in half.
- Arrange the carrots and garlic in a baking dish and drizzle generously with olive oil.
- Season with salt, pepper, and sumac, then mix well to coat evenly.
- Roast for 30–40 mins, or until the carrots are tender and lightly caramelized.
- Meanwhile, prepare the yogurt sauce by mixing the Greek yogurt, lemon juice, zest, and tahini until smooth.
- Once roasted, mash the softened garlic into the yogurt mixture and stir well.
- Spread the yogurt sauce onto a serving plate and arrange the roasted carrots on top.
- Finish with fresh parsley and a final drizzle of olive oil.
Serve warm!
