Roasted Carrots with Sumac

Difficulty: Easy

For 2-3 people

 

 

Ingredients:

 

 

For serving:

  • 1 cup Greek yogurt 
  • Juice and zest of ½ lemon 
  • 2 tbsp tahini

 

Preparation:

 

  1. Preheat the oven to 180°C. 
  2. Wash the carrots and trim the tops. 
  3. Slice the garlic clove in half. 
  4. Arrange the carrots and garlic in a baking dish and drizzle generously with olive oil. 
  5. Season with salt, pepper, and sumac, then mix well to coat evenly. 
  6. Roast for 30–40 mins, or until the carrots are tender and lightly caramelized. 
  7. Meanwhile, prepare the yogurt sauce by mixing the Greek yogurt, lemon juice, zest, and tahini until smooth. 
  8. Once roasted, mash the softened garlic into the yogurt mixture and stir well. 
  9. Spread the yogurt sauce onto a serving plate and arrange the roasted carrots on top. 
  10. Finish with fresh parsley and a final drizzle of olive oil. 

 

Serve warm!
