Lebanese Lemonade with Orange Blossom Water

For 4 glasses
Ingredients:
- 4 organic or unwaxed lemons
- 1 to 2 tbsp Orange Blossom Water
- 100g sugar, adjusted to taste
- 500ml chilled water
- 1 large bowl of ice cubes
- A few fresh mint leaves
Preparation:
- Wash the lemons thoroughly. Cut off both ends, then cut the lemons into large pieces, keeping the peel on. Remove all the seeds to prevent the lemonade from becoming overly bitter.
- Place the lemon pieces in a blender. Add the sugar and half of the chilled water. Pulse for 15 to 20 seconds to release the lemon’s aromas without completely blending the peel.
- Strain the mixture through a fine-mesh sieve into a jug. Press gently with the back of a spoon to extract all the juice, then discard the remaining peel.
- Pour the strained juice back into the cleaned blender. Add the remaining water, the ice cubes and the Terroirs du Liban Orange Blossom Water.
- Blend until the ice is finely crushed and a light foam forms on the surface.
- Pour immediately into large glasses and garnish with a few fresh mint leaves.
